Gutturnio is a wine made by employing Barbera (55 %) and Bonarda (45 %) grapes harvested around the end of september. After being crushed grapes undergo a maceration of 10-12 days where the juice remains in contact with the skins and seeds to get the classic ruby red color and tannins typical of this wine.
After maceration, we separate the must from the skin and at this point we proceed with the decanting and a slight ageing of seven months in cement tanks to obtain an ideal micro-oxygenation.
