The Cabernet Sauvignon is a grape variety from the region of Bordeaux and from there it spread around the world, is part of the socalled international varieties and is also referred to as the “perfect grape.” The grapes are the last to be harvested in late September or beginning of October; Once pressed, you will make a long maceration to obtain a full-bodied and structured wine, suitable for aging.
The maceration lasts 10-12 days, that is until the end of the alcoholic fermentation. Once completed, we will proceed with racking and pressing and then with a resting stage where will the malolactic fermentation that allows you to get a wine less acidic, plusher and full-bodied.
After this occurred, the wine will be racked and aged in cement tanks to have a correct exchange of oxygen with the outside environment.
